Shrimp and Bok Choy Soup
Simple and flavorful! Enjoy! SHRIMP & BOK CHOY SOUP
2 tsp Vegetable oil 8 oz Shrimp - peeled, deveined, halved lengthwise 1 tsp Minced garlic 1 lb Bok choy - washed, sliced thin 48 oz Chicken stock 1 tbl Reduced sodium Soy sauce 4 ea Green onions (Scallions) 2 oz Fresh Chinese egg noodles (can sub with dried egg &nb sp; noodles). 1.5 tsp Grated fresh ginger
Sweat garlic and grated ginger in vegetable oil, briefly DON"T BURN THE GARLIC. Add shrimp, cook to opaque in color. Add Chicken stock & Soy sauce, simmer 5 minutes Add Bok choy, simmer 5 more minutes. Add Fresh egg noodles, simmer 2 - 3 minutes (fresh egg noodles cook very fast, adjust your time for dried egg noodles.) Use a little more soy sauce if more salt (seasoning) is needed instead of salt.
