This is a raw, healthy salad. The Calabaza squash has a sweet flavor and is high in Vitamin A & C. The Chayote is rich in Amino acids and Vitamin C. Great for outdoor events as it has no dairy, and will stay in the fridge in airtight container for up to a week. It only gets better as it marinades! Hopefully, everyone that wants to try will be able to find the Calabaza and Chayote in there local markets. Enjoy!
Raw Squash Salad
1/2 Calabaza Squash (peeled & seeded)
2 Chayote Squash (cored)
1 Cubanelle Pepper – (seeded) Julienne or sliced thin
2 Shallots – minced
2 Garlic cloves – minced
*Best if done in food processor with shred attachment or on a mandolin, slice Calabza and Chayote thin strips (Julienne).
Add all above ingredients and mix well with vinaigrette below.
Vinaigrette
2/3 c. Olive oil
1/4 c. Apple cider vinegar
1 tbsp Honey (or you can use sugar or sugar substitute, your preference)
1 tsp Crushed red pepper
2 tbsp Fresh thyme
2 tbsp Fresh parsley – chopped
1 tsp Anchovy paste
Salt & Pepper to taste
*Combine all ingredients; dissolve anchovy paste into the vinaigrette. Add to raw salad ingredients and mix to combine.
